Prep like a restaurant kitchen: a weekend plan

Restaurant kitchens do the slow jobs before service. At home that means an hour or two at the weekend, then quick cooking every evening.

What to do ahead

Make sauces, stews and soups. Marinate meat and fish the night before. Wash and chop sturdy vegetables. Make dressings and desserts that keep.

What to leave for the day

Cook rice, pasta and fried things fresh. Dress salads just before you eat. Fry plantain at the last minute.

Keep it safe

Cool cooked food quickly, cover it and put it in the fridge. Reheat until it is steaming hot all the way through. Put cooked rice in the fridge within an hour and eat it within a day.

Use the prep plan
